National Watermelon Day
Happy National Watermelon Day! In celebration of this sweet treat, I've decided to share 3 delicious watermelon recipes I found online, with my own twists of course. The first recipe we'll start out with is the most basic. Take a cup of ice with any lemon-lime soda (I used Sprite), add cubes of watermelon and some lemom, and there you have it! A simple and fruity, refreshing beverage.
Nothing is better on a hot summer day than an ice cold popsicle or a frozen treat, so here we have homemade watermelon sorbet with only 3 ingredients! Freeze 2 cups of watermelon overnight. Place them in a food processor (I used the Cooks Power Blender) with the juice from 1 lime and sugar to taste. Not only is it quick and simple, it's healthy too!
Watermelon Mango Pico de Gallo
Now I've saved the best for last! I love me a good mango salsa, so why not be experimental and add a bit of watermelon to it? Start with 2.5 cups of cubed watermelon and 1 cup of diced mango. Add 1/2 cup diced onion with 2 tablespoons cilantro. Mix in 1 lime, juiced, and a couple diced jalepenos. Depending on how spicy you like it, this step is optional. I used about 8 jalepenos in mine and it just gave the pico a slight kick. Stir in salt and pepper to taste and you're finished. Serve with chips and enjoy!
